Reciiiiiipe!

Hey guys!! Hope you’re all having a lovely week so far. Today I’m going to share one of our favorite recipes with you. It’s so easy, and super tasty – you should totally make it for dinner tonight!

This is a one dish meal. All inclusive. Don’t you love dinners like that? I named it Ratatatouille because it’s sort of like Ratatouille, with a little more pizzazz. Okay, the star of this dish is Andouille sausage. You need to find some. It’s wonderful! I always get a pack at my local fruit stand, and it’s made semi-locally in Taylorsville, MS (I’m pretty sure the brand is Bryant). So here it is:

Brown your sausage. Chop the veggies. Drain the sausage. Add the zucchs and squash to your pot, along with an undrained can of Fire Roasted Diced Tomatoes (mine were Garlic flavored). Simmer for about 45 minutes on medium-low. Serve it up like soup – with a smidge of shredded parmigiana and some fresh basil from your garden.

Super tasty, super healthy. If you aren’t doing low-carb, a piece of slightly toasted crusty bread pairs really well with this.

    I’ve got to try it! I’ve been sauteing zucchini and squash with onions and garlic, then adding Italian seasoned diced toms and serving with grated Parm. I think your dish would push mine to a greater flavor level. Thanks for sharing!

      Oh yeah! You’ve been making a vegetarian version! The andouille adds such an intense burst of flavor… Be sure to let it simmer – and it’s even better the next day!

    where can i buy the brants Andouille sausage online? see i am from there and i miss my sauage and i cant find it any where in the stores on the coast.
